Barking, London Catering Team Prepares West African Snacks For New Yam Festival

A lot of times, events are only as good as the companies that cater them. Well, the ICSN 25th Anniversary and New Yam Festival must have been pretty dang good then, because respected catering company Ellesu was supplying its dishes. They put together a menu that included West African grazing snacks such as roasted yam and puff-puff cups.

The Event

The Igbo are one of the largest ethnic groups in southeastern Nigeria. The event – which was held October 7th, 2023 at the Oasis Banqueting Hall in Barking, London – commemorated the silver jubilee of the Igbo Cultural Support Network (ICSN), a non-profit organization that seeks to preserve and share Igbo heritage. Running concordantly with the event was the New Yam Festival, an annual celebration put on by the Igbo people to mark the end of the rainy season.

“With a guest list of 100 attendees, we embraced the opportunity to showcase our culinary prowess and honour the rich traditions of the Igbo culture,” explained a spokesperson for Ellesu. “By all accounts, our innovative creations left a lasting impression on those at the event.”

The Menu

For the menu, Ellesu crafted four grazing snacks – small chop pouches, buns, roasted yam, and puffpuff cups. The puff-puff cups – available in cinnamon sugar, powdered sugar, Oreo, and white chocolate drizzle flavours – were a crowd favourite, constantly requiring restocking throughout the evening.

Ellesu prepared all of the snacks using fresh ingredients sourced from local food stores and supermarkets, ensuring a high level of quality in every dish.

“All four snacks were delicious, but the cinnamon-flavoured puff-puff cups were definitely my favourite,” said a satisfied attendee. “They were the perfect combination of sweet and savoury, and just the right size for a finger food. In fact, I wish I could have some more of them right now.”

The Service

Ellesu was commissioned for the welcome slot of the event, which ran from 6 pm to midnight. As such, they brought with them three exceptional servers experienced in timely food preparation and delivering memorable guest experiences. Throughout the evening, they monitored food health and made certain that dishes were always available.
